- "These flavorful sliders are inspired by my travels across the galaxy, so no matter what your tastes are, you're sure to find something to satisfy your craving! All sliders are served with our special garnish. Sernpidalian mayo-ketchup and Bimm mustard available upon request."
- ―The Dex's Diner menu
Bimm mustard was a type of mustard that the Besalisk Dexter Jettster enjoyed the taste of and used in Dex's Diner, his restaurant on the planet of Coruscant, before[1] the business was destroyed at some point in the first two years of the Galactic Empire's rule.[2] It would be served upon request alongside any slider on the menu.[1]
Behind the scenes[]
Bimm mustard is mentioned in a Hyperspace-exclusive release, "Dining at Dex's" by Gregory Walker, which represents the in-universe menu of Dex's Diner.[1] "Bimm" is the name of two species, one furred and the other Near-Human, found in the Star Wars galaxy.[3] However, no definitive connection between the condiment and either of them is established in Walker's work.[1]

- ↑ The Last of the Jedi: Underworld established that Dex's Diner was destroyed by the Galactic Empire. The Essential Reader's Companion later stated that the novel took place around the year 18 BBY. The New Essential Chronology states that the Empire was formed in 19 BBY, so Dex's Diner was destroyed either during 19 BBY or 18 BBY.
