The Death Star prisoner was a Human Jedi Padawan that somehow survived Order 66 but was imprisoned aboard the first Death Star.

Shortly before the Battle of Yavin this Jedi led various prisoners of Detention Block 2180 including those of the previous Battle of Naboo, in what became known as the Death Star Uprising.

During the later stages of the Death Star's construction, captured Imperial enemies from all across the galaxy were quietly sent to the top-secret space station for interrogation and imprisonment. A group of captives of the organized Rebel movement became acquainted with the unidentified Human Jedi Padawan prisoner who was also confined to Block 2180. He had devised a simple plan to escape from the Imperial battle station that could be initiated with the cooperation of the other inmates.

The prisoners managed to break out of their cells and raid an Imperial armory. As various prisoners scattered throughout the station, the Jedi led a large group of them to Hangar 85-G. They attempted to board a Sentinel-class landing craft and almost succeeded with less than 2 minutes before take-off. Their Jedi Padawan leader at last exposed himself in a desperate sprint toward the shuttle, but a moment later Imperial shock troopers of the 501st legion blew it up.

The frenzied Jedi ignited two green-bladed lightsabers and cut through all of the troopers that stepped into his path. After a horrific firefight, he was gunned down. As a result of the break, the troopers of the 501st Legion were re-assigned.

It is highly likely that the Imperials in the detention block had no knowledge that the Human was a Jedi, as he would have undoubtedly been moved to a more secure cell or been immediately executed if they had known otherwise. This could also explain how he managed to conceal his two lightsabers without raising suspicion.
